Recipe of Guvar sabzi ( cluster beans)
Guvar ( cluster beans) is served as a side dish with chappatis / phulkas . This simple cluster bean is saute in very less ingredients in this recipe, there are few more variation of guvar sabzi ( cluster beans) which I will surely introduce in coming days. In fact beans are prepared in different ways in different parts of India, ( eg, Gujrati style , Maharashtrian style , Rajasthani style and so does we Muslims ( follower of Islam) have. I know many have notions that Muslims, only have non - veg, but that is not true, we have veg too almost every day, in fact as I mentioned above that, I prepare guvar ( cluster beans) in few more variations, so that is just a myth.
Though its the easiest , healthiest, simplest , and one of the best Recipe of cluster beans , as it takes very less ingredients which are all present in your kitchen rack. Guvar is saute in onions, which in turn, when cooked gives a perfect, sweet taste to guvar .It looks simple, but I bet you, gonna drool over it....!
150 gms guvar ( cluster beans)
2 big onions finely chopped
4 -5 cloves chopped garlic
2 whole red chilies
1 tsp cumin seeds
1. Wash the beans, just trim the top and bottom sides, cut beans into 3 inch long pieces or chop each into half if they are small.
2. Heat oil in a kadhia, add cumin seeds, let it splutter, add garlic and saute for a minute.
3. Add chopped onions and fry until translucent.
4. Now add guvar ( cluster beans ) with salt , mix everything well. Add 1/2 cup water.
5. Cover and cook on low flame until the beans completely done and oil separates.
6. Serve hot with chapattis/ phulkas.
- Choose tender cluster beans as mature ones take a long time to cook .
- You can add chopped green chilies during the time when adding garlic if you want a little spicy, though I have not added any as I like it this way.
- You can prepare the sabzi ( vegetable) in cooker as well, instead of preparing in kadhai/wok , use cooker, as the procedure would be the same, just cover the lid and pressure cook it for 2 whistle on high flame, off the gas and let the pressure releases naturally. Open the lid and check if there is any gravy, then dry it on high flame, as this vegetable should be in the form of little thick masala stuck to guvar.
- Serve with chapattis or phulkas.
- While in the making if you notice, that the beans sticking at the bottom , but is yet to be done , then add more 1/2 cup of water, cover and cook until completely done.
- For making for 250 gms guvar, take 3 big onions or 4 medium sized , to get the perfect taste.
PREPARATION TIME: 20 - 30 Minutes.
SERVES: 2 Persons.
