Chicken Pot Rice ( Indo Chinese )



CHICKEN POT RICE is a delectable main course in which an Indo Chinese gravy is prepared and is served with flavored rice or Fried rice over it .
It is called Pot Rice because of its different serving technique , like the chicken gravy is first placed in the pot and then the layer of flavoured rice placed on it and served hot .



I am not aware as to how restaurant's chef make it , but here this recipe is basically my created lip smacking recipe . As I was too tired of making same old fried rice and serve with any kind of gravy , so thought to make rice flavorful and serve with my chicken gravy layered in pot . I am sure you will like it . Here is my recipe of Chicken Pot Rice .





INGREDIENTS : 
  • 250 gms boneless chicken 
  • 8-10 cloves of finely chopped garlic 
  • 1 tbsp ginger finely chopped 
  • 1 nos green chilly
  • 2 tbsp schezwan
  • 2-3 tbsp soya
  • 1 vingear
  • 1/2 tsp sugar
  • 2 tbsp cornflour in 1 cup of water
  • 1 tsp chilly sauce
  • 1 tsp green chilly sauce 
  • 1/2 cup Spring onions ( greens ) 
  •  1/2 cup red bell pepper chopped into cube shape 
  • 1/2 cup green Capsicum chopped into cube shape 
  • 1/2 cup yellow bell pepper chopped into cube shape 
  • few florets of broccoli 
  • 1/8 tsp pepper powder 
  • spring onions ( bulbs ) chopped into two pieces 
  • oil / butter
INGREDIENTS FOR MARINATIONS : 
  • 2-3 soya sauce 
  • 1 tsp green chilly sauce 
  • 1/4 tsp pepper powder 
  • salt 
METHOD : 
  1. Clean , wash and chop chicken into thick pieces and marinate with the ingredients mentioned under " INGREDIENTS FOR MARINATION ' section for 1-2 hour .
  2. In a non stick pan or wok , drizzle little oil or 2 tbsp butter and saute chicken on high flame until the juice has dried up .
  3. Drain and transfer into a dish and keep aside .
  4. Now in the same wok or nonstick deep pan , add little oil if needed and add chopped ginger , green chilly and garlic .
  5. Fry for a minute or two , add onions ( bulbs ) and fry for a minute again .
  6. Now add schezwan chutney , salt , pepper , vinegar , soya sauce , red chilly sauce , green chilly sauce , and sugar .
  7. In a small bowl , dilute cornflour in water and add to the gravy .
  8. Once the gravy thickens , add chicken , broccoli and all 3 coloured bell peppers . Adjust the seasonings like salt and pepper and adjust the sauces too if needed .
  9. Transfer the gravy to a large pot and add the flavored rice as a second layer and serve hot immediately .

NOTE : 
  • Adjust soya sauce , chilly sauce , vinegar as per your preferences .
  • Add more schezwan if you like too spicy .
  • If you do not have spring onion bulbs then add thickly chopped onions .
COURSE : Main Course 
COOKING TIME : 30 -40 minutes .
PREPARATION TIME : 10 -15 minutes . ( excluding marination time )
TOTAL TIME : 55 Minutes .
SERVES : 3 Persons .


FLAVOURED RICE :

INGREDIENTS : 
  • 2 cups basmati rice 
  • 2 -4 tbsp butter 
  • 2-3 tbs soya sauce
  • some pepper powder 
  • 1/2 or 1 cup finely chopped spring onions  ( green ) 
  • 1 coal 
  • salt  
METHOD : 
  1. Wash basmati rice in running water for 2 -3 times and soak it in adequate water for about 30 minutes .
  2. In a large vessel or pan , boil 4-5 cups of water with salt .
  3. Once the water boils , drain the rice and add to the boiling water .
  4. Cook the rice until the rice is almost done .
  5. Drain and keep aside .
  6. In a wok , heat butter and add rice .
  7. Add soya sauce and freshly crushed pepper , mix everything well . 
  8. Add spring onion greens and mix roughly .
  9. Sprinkle few drops of water and rose water (kewra water ) on rice . Close the lid and cook for 5-7 minutes until the smoke starts coming out . Turn off the gas .
  10. On the other hand , make the coal red hot on gas .
  11. Once the coal is red , place in a small bowl or small piece of foil paper , place this in the middle of the rice and add 1-2 tbsp oil on the coal . 
  12. Cover the lid immediately and keep some heavy weight on it so that the fumes do not run out easily and remain in the rice giving it a smoky flavour to it.
  13. Place the flavoured rice over the bowl of chicken gravy .
  14. Serve hot immediately .

NOTE : 

If you want you can serve with fried rice instead of flavorful rice .

SERVES : 3 Persons .
