Enchilada Sauce

Enchilada Sauce is a Mexican sauce, particularly made of tomato and chilly sauce. This sauce is topped over various baked dishes , more over particular used as one of the main ingredients in making Enchiladas. The best part of this sauce is you can make a big batch and then store in a glass jar and freeze it for further use.

Here is the Recipe of Enchilada Sauce .....! Easy , peasy and delicious .

INGREDIENTS : 1 and 1/2 tbsp all poupose flour 
3 cups chicken stalk 
170 gms tomatoes paste / tomatoes
1 tsp cumin powder ( roasted and grounded ) 
1 tsp garlic powder 
1/2 tsp onion powder 
1 tsp mixed herbs 
salt to taste 
2-3 tbsp red chilly powder 
1/4 tsp sugar
2 tbsp vegetable oil 

  1. Blanch , peel and grind the tomatoes in a food processor. ( skip this step, if you are not using ready made tomato paste )
  2. Heat oil in a pan , add flour and stir continuously until it turns smooth and no lumps formed , if any, break it with your spatula by pressing it .
  3. Cook this mixture for a minute and add chilly powder , stir and within few seconds add tomato paste and chicken stock. ( make sure here after adding the red chilly powder , you slow down the gas or else the chilly powder will burn ) 
  4. Add the remaining ingredients like mixed herbs , onion powder , garlic powder , cumin powder , sugar , salt as per your taste . 
  5. Bring to boil and let it simmer for 10 -13 minutes.
  6. Adjust the seasonings and serve or once completely cool , transfer the sauce to an air tight container or glass jar and store in freezer for further use. { Recipe by zulekha Arafat}

  • If you want more spicy than add paprika powder or cayenne powder after you add the remaining ingredients .
  • If you want you can even add finely chopped green chillies too.
  • You can preserve the remaining sauce in glass jar and freeze it for next use.

COOKING TIME : 15-20 Minutes.
TOTAL TIME : 20 Minutes.

Mutton Frankie Recipe

250 gms lamb ( mutton ) boneless
1 onion chopped
2 peeled and  chopped tomatoes
1/4 tsp turmeric powder
2 tsp coriander powder
1 tsp red chilly powder ( you can add 1 tsp more if your red chilly powder is mild hot )
2 tsp ginger garlic paste
1/2 tsp garam masala powder
1/4 tsp cumin powder
Coriander leaves for garnishing 

1 and 1/2  - 2 cups all purpose flour
3-4  tbsp ghee ( clarified butter)

2 onions finely chopped
chaat masala
2 nos finely chopped green chilies
6-7  tsp Vinegar 
4 eggs

Green Foil Chicken

GREEN FOIL CHICKEN is one of my those recipe where I kept on adding ingredients and it turned out to be really tasty. Infact I was making my Green Chicken Recipe ( gravy ) which I thought I shall make it dry but then kept on adding more ingredients to the original recipe and the results were super awesome. My Green Foil Chicken is delectable, delicious and scrumptious in taste, do try it , its a thumbs up recipe....!

Green Foil Chicken , the freshness of coriander and mint assorted with spices and nuts, gives a royal taste to Green Foil Chicken , it is named as GREEN FOIL CHICKEN because of the obvious reason and that is its Rich, vibrant and attractive GREEN colour , and the way its being served in foil papers . Here is my recipe of Green chicken , without much ado...:)
